WHAT IS ENTORNO?

Hello!

My name is Sebastián Mardones and I am the one responsible for bringing this project to life. Philosophically, Entorno is a reflection on "rooting oneself in a place and cooking what surrounds you." Entorno is not a restaurant; it is an experience that takes place within my home— a heritage house dating back to 1910. In our intimate, cozy, and exclusive dining room, my wife and I take care of every detail for you.

CUISINE & CONCEPT

My cooking tells a story of heritage and territory, rooted in the O’Higgins region. It is a tribute to the flavors and customs that defined my childhood.

From the Land:  We work directly with local foragers, small-scale producers, and ingredients from my own organic garden.

Direct Sourcing: No intermediaries. From the fisherman, the muleteer, and the local artisan straight to our table.

The Element: Authentic Chilean flavors enhanced by the ancient technique of open-fire cooking

The Experience: A balanced 6 course menu that showcases the region's diversity, celebrating the nostalgia and romanticism of the past through a contemporary lens

Menu and Pricing

  • Tasting Menu: $45,000 CLP per person (Wine pairing not included).
  • Includes: 6 courses, water service, coffee, and herbal teas.
  • Add-ons: A curated selection of wines, as well as alcoholic and non-alcoholic beverages, is available.

Hours and Capacity

  • 10 seats, 1 shared table: Minimum 2 people – Maximum 10 people.
  • Thursday to Saturday:
    • Lunch: 1:00 PM to 3:00 PM
    • Dinner (2 seatings): 7:00 PM to 9:00 PM and 9:30 PM to 11:30 PM
  • Sunday:
    • Lunch: 1:00 PM to 3:00 PM
